THE STORY OF HOW
My Southern Comfort Coconut Cake Cake To Be The first time I made my now infamous Southern Comfort Coconut Cake we came darn close to making a good friend barren. I’m a big fan of quality ingredients and if I won’t eat it personally, it ain’t going in my cakes. At the time, I was living on a tiny Florida island and wild coconuts from neighbor's palms trees were plentiful. What originally started as I’ll grab some coconuts from a neighbors yard turned into how the actual cluck do you get this thing open?!? I elicited the help from a chef friend. I never knew (nor did I ever ask…), why he had an actual machete in his kitchen…but he offered help and off I ran to his kitchen, fresh coconuts in tow. Another friend of his was at his restaurant. Typical story of wrong place. Wrong time. (insert scary music here). My chef friend wrapped his hands tightly around the machete handle, lifted it above his head and with full force whacked at the coconut. He missed the coconut entirely but did come damn close to chopping his own appendages off. I winced and screamed like the girl that I am. The guys laughed like only 5 year old boys, errr, I mean grown men do. Chef grabbed the coconut again with his friend on the other side of the kitchen. Me, far behind. |

Up went the arm of the crazy machete wielding chef anddddd whackkkkk into the coconut…that now FLEW across his kitchen at lightening speed…right into his friend's groin.
He doubled over in pain.
And we laughed like the little 5 year olds we are.

Flash forward to today…I just drive to Whole Foods and buy organic shaved coconut. Not as hilarious but definitely safer!!!
